1 Introduction
1.1 About these operating instructions
These instructions contain information for the installation and connection of a dosing unit of a competitor. Dosing units of a competitor
are dosing devices that do not come from Winterhalter Gastronom GmbH. To be able to work safely with the dosing device, the safety
and operating instructions provided must be observed. Compliance with the valid national accident prevention regulations and general
safety provisions must be ensured.
1.2 Copyright
The instructions are protected for the manufacturer by copyright.
The instructions contain guidelines and drawings or parts of drawings of a technical nature, which may not be reproduced, distributed,
used for the purposes of competitors without authorisation or shared with others, either in whole or in part.
The operator of the warewasher is permitted to make copies, in whole or part, expressly for internal application relating to the operation
of the dishwasher. The manufacturer is entitled to claim damages for any infringements. Further rights reserved.

1.3 Proper use
The dosing device is used for the automatic dosing of detergent or liquid rinse aid in commercial warewashers.
The dosing device is a technical device for commercial use only.
Train operating personnel in handling the dosing device and point out safety notes.
1.4 Improper use
Children must not be allowed to play with the dosing device.
Do not install dosing devices inside or on cover elements of Winterhalter warewashers.
Winterhalter Gastronom GmbH assumes no liability for any damage caused by improper use of the dosing device.
To avoid damaging the warewasher and to achieve a good wash result:
Do not use acidic detergents.
Do not use foaming products (e.g. manual washing-up liquid) for pre-treating the wash items.
2 Safety notes
The additional devices may be connected to the electrical mains supply only by a specialist company registered within the elec-
trical trade and approved by the energy supplier.
Work on the electrical system, installation and maintenance work as well as repairs may be carried out only by qualified specialists.
When working on the electrical system, doing installation and maintenance work as well as repairs, observe the electrical engineer-
ing safety rules to avoid electrical accidents:
Disconnect all power supply points.
Secure the machine against being switched on again.
Check that there is no voltage present.
Earth and short circuit.
Cover or cordon off neighbouring parts that are live.
Touching live components can lead to death by electric shock. In the event of a defect or damage to an electrical component /
cable or its insulation, switch off the power supply immediately and arrange for its repair by a specialist.

Overview

This document provides assembly instructions for connecting external dosing devices to Winterhalter UF Series V01 warewashers. It covers the installation, electrical connection, configuration, and setup of both detergent and rinse aid dosing devices.

Function Description

The external dosing devices are designed for the automatic dosing of detergent or liquid rinse aid in commercial warewashers. These devices are not manufactured by Winterhalter Gastronom GmbH but are integrated into the UF Series V01 warewashers to enhance their functionality. The system supports both conductance-controlled dosing for detergent and time-relay or adjustable-output dosing for both detergent and rinse aid. The primary function is to ensure optimal washing results by precisely controlling the amount of cleaning agents dispensed during the wash and rinse cycles.

Important Technical Specifications

Electrical Connection:

  • The additional dosing devices must be connected to the electrical mains supply by a registered specialist company approved by the energy supplier.
  • Work on the electrical system, installation, maintenance, and repairs must be carried out by qualified specialists, adhering to electrical engineering safety rules.
  • The maximum current drain at the transfer strip is 0.5 A.
  • External dosing devices must have their own fuse protection and be included in the protective circuit (PE) of the warewasher.
  • The transfer strip provides various terminals:
    • L1: Continuous voltage / phase 1
    • N: Neutral / phase 2
    • RINSE: For rinse aid dosing device
    • WASH: For detergent dosing device (type-dependent)
    • FILL: For detergent dosing device (type-dependent)

Dosing Device Configuration (via P704 and P709 parameters):

  • P704 (Detergent dosing device):
    • P704 = 0: Voltage present at FILL terminal while machine is being filled.
    • P704 = 1: Voltage present at FILL terminal parallel to solenoid valve (07), meaning while the machine is being filled and during the rinse.
  • P709 (Rinse aid dosing device):
    • P709 = 0: Voltage present at RINSE terminal parallel to rinse pump (012).
    • P709 = 1: Voltage present at RINSE terminal parallel to solenoid valve (07), meaning while the machine is being filled and during the rinse.

Rinse Water Consumption (l/rack):

  • UF-M, UF-L:
    • Standard: 4.7 l/rack
    • Energy: 4.7 l/rack
    • High Temp: 5.5 l/rack
  • UF-XL:
    • Standard: 7.0 l/rack
    • Energy: 7.0 l/rack
    • High Temp: 9.0 l/rack

Tank Capacity (litres):

  • UF-M, UF-L: 69 litres
  • UF-XL: 138 litres

Flow Rate Solenoid Valve: 4 l/min

Physical Connections:

  • Connections for detergent and rinse aid dosing hoses are available on the warewasher with an inner diameter of 5 mm.
  • Specific drilling positions are provided for the measuring electrode (conductance-controlled dosing) and the inflow point for powder dosing devices.
    • Measuring electrode position (1): 170 mm from the bottom edge, 30 mm from the side edge, and 78.5 mm from the front edge (for UF-M/UF-L and UF-XL).
    • Inflow point for powder (2): 300 mm from the bottom edge (for UF-M/UF-L and UF-XL).

Usage Features

Installation Process:

  1. Preparation: Disconnect the warewasher from the electrical mains, remove front and right-side covers, and insulate existing Winterhalter dosing device connections if present.
  2. Dosing Device Installation: Install the external dosing device on-site.
  3. Hose and Cable Routing: Lead dosing hoses and connection cables through designated points on the back of the warewasher chassis.
  4. Hose Fastening: Secure detergent dosing hose to connection (2) and rinse aid dosing hose to connection (6) with wire hose clips.
  5. Suction Tube Connection: Connect the suction tube cable to the plug (4/5).
  6. Kink-Free Guidance: Ensure all hoses and cables are guided without kinks.

Conductance-Controlled Dosing Device Installation:

  1. Access: Open the door, remove lower wash arms, strainer, and filter cylinder.
  2. Swarf Protection: Line the tank interior with cloths or paper to catch drilling swarf.
  3. Drilling: Determine drill hole size for the measuring electrode and drill at position (1).
  4. Finishing: Deburr the hole, remove swarf, install the measuring electrode, and lead its connection cable to the dosing device.

Injection Hose for Powder Dosing Device Assembly:

  1. Access: Open the door, remove lower wash arms, strainer, and filter cylinder.
  2. Swarf Protection: Line the tank interior with cloths or paper to catch drilling swarf.
  3. Drilling: Determine drill hole size for the flushing nozzle and drill at position (2).
  4. Finishing: Deburr the hole, remove swarf, mount the flushing nozzle, fasten the injection hose with a hose clamp, seal cover openings, and attach edge protection.

Electrical Connection:

  1. Safety First: Isolate and lockout the mains supply, and verify no voltage is present.
  2. Connection: Connect the external dosing device to the transfer strip according to the device type.
  3. Configuration: Configure the transfer strip using parameters P704 and P709 in the Chef's PIN menu.

Start-up Procedure:

  1. Close the warewasher cover.
  2. Switch on mains voltage and the warewasher.
  3. Properly put the dosing device into operation.
  4. Perform a safety inspection (DIN VDE 701).
  5. Activate several washing programs to check for leaks in the warewasher and installed components.

Configuring the Transfer Strip:

  • Access the external dosing menu using PIN 1575. Incorrect PIN entry five times blocks input for 2 minutes.
  • Use scroll keys to change parameters and set parameter values for P704 (detergent) and P709 (rinse aid).

Dosing Device Examples:

  • Fixed Output and Time Relay:
    • One time relay: Connect to WASH terminal; detergent doses when wash pump runs for the set time.
    • Two time relays: Connect one to FILL terminal (P704=0) for initial filling dosing, and another to WASH terminal for dosing when wash pump runs.
  • Adjustable Output:
    • Detergent: Connect to FILL terminal (P704=1); detergent doses during initial filling and with each rinse. Output calculated as: Flow rate solenoid valve [l/min] x desired concentration [ml/l] = output [ml/min].
    • Rinse Aid: Connect to RINSE terminal (P709=1); rinse aid doses when rinse pump runs. Output calculated as: Flow rate solenoid valve [l/min] x desired concentration [ml/l] = output [ml/min].

Maintenance Features

  • The instructions emphasize that work on the electrical system, installation, and maintenance, as well as repairs, must be carried out only by qualified specialists.
