Chilling means bringing the temperature of
cooked food from +90ºC to +3°C in a short
time lap to minimize bacteria proliferation and
avoid loss of food consistency and texture.
The ZANUSSI easyChill Blast
Chillers/Freezers reduce temperature to
+3°C at food core in less than 90 minutes
and down to -18°C in less than four hours.
After the Blast Chilling a holding cycle starts
automatically to respectively maintain food at
+3°C and -18°C. Blast freezed food has a
solid 6 months/1 year shelf life without loss of
flavour, nutritional values and weight. The
opportunity to prepare in a single shot the
food to be used in different times during the
week enables a better work scheduling and
therefore a sensible reduction in labour costs.

Overview

The Zanussi Active Blast Chiller/Freezer is a professional appliance designed for rapid chilling and freezing of cooked food, ensuring food safety and quality. Its primary function is to quickly reduce the temperature of cooked food from +90°C to +3°C (chilling) in less than 90 minutes, and down to -18°C (freezing) in less than four hours. This rapid temperature reduction minimizes bacteria proliferation and prevents loss of food consistency and texture.

Function Description:

After the blast chilling or freezing cycle, the appliance automatically initiates a holding cycle to maintain food at +3°C or -18°C, respectively. Blast-frozen food can have a shelf life of 6 months to 1 year without compromising flavor, nutritional values, or weight. This capability allows for preparing food in advance, optimizing work scheduling, and reducing labor costs.

The chiller/freezer offers two main chilling modes:

  • Soft Chilling: Operates with an air temperature of -2°C.
  • Hard Chilling: Operates with an air temperature of -20°C.

All probe-driven cycles utilize ARTE (Algorithm for Remaining Time Estimation), which displays the estimated time needed to complete the cycle, aiding in planning activities. The appliance automatically activates a holding cycle at +3°C at the end of each chilling cycle. A "Turbo Cooling" function allows the chiller to operate continuously at a desired temperature, making it ideal for continuous production and pastry applications. The system automatically recognizes the insertion of the food probe, allowing cycles to be piloted either by food probe temperature or by time. A single-sensor core probe is included as standard.

The control unit offers various operating settings, including time/core temperature according to NF and UK regulations, time/air temperature/probe personalized according to national regulations, and a sterilizing cycle with built-in UV lamps (available on request). It supports 3 single-sensor or 3-sensor temperature probes (as an accessory), which are ideal for meats. Both automatic and manual defrosting options are available, and all parameters are programmable.

The control unit features two large displays that show time, core temperature, residual time, alarms, and service information. Two customizable cycles (P1-P2) are available for each operating mode, allowing users to set time and air temperature. These programs can also be converted into ice-cream specialist cycles for shape maintenance and holding. The appliance records all information related to different operating models, including date, time, cycle, core temperature, holding temperature, and HACCP compliance. An audible alarm signals when a cycle ends or terminates abnormally.
