Installation and maintenance instructions
ATTENTION
Wherever sand is found in the water supply circuit, a lter must be applied between the water circuit and the
machine.
The operating pressure must not be less than 2 bar and more than 4 bar (200-400 kPa).
If the pressure is lower, it is recommended to install a pressure booster pump. If the pressure is higher, it is
recommended to install a pressure reducer.
For best results, it is advisable to have inlet water with a hardness of no more than 10°F and a temperature of
10-15°C.
For greater hardness, use machines with a built-in softener, ion exchange or reverse osmosis softeners.
For appliances connected to the water mains by removable hose sets, a new set of hoses must be used and
the old ones must not be reused.
Strictly comply with any applicable national or regional regulations.
The manufacturer will not be held liable for damage to the machines resulting from failure to comply
with the rules specied above.
3.1.e Osmosis water hydraulic connection (“Y11” BLACK - if present) (Optional)
Supplying of the machine with drinking water is a fundamental requirement.
Provide a 3/4” G threaded valve to which to screw the end of the inlet hose. For the sizing of the same, refer to
the installation drawing.
ATTENTION
It is mandatory to replace the seals of the ller hose for water supply, whenever it is disassembled and
reassembled.

For best results, it is advisable to have the inlet water at a temperature of 10-15°C.
The optimal quantity of water for rinsing is ensured by the ow reducer of the solenoid valve "Y10".
3.1.f Steam connection (“E”)
(only for machines with steam heating)
• For steam supplies, connect to the machine ttings indicated in the installation drawings.
• To make the equipment independent of the general network, a 1” gas shut-off gate valve should be provided.
The operating pressure must not be less than 0.5 bar and more than 1.5 bar (50-150 kPa).
The temperature must not be lower than 110.8°C and higher than 127°C.
If specically requested when ordering, the maximum pressure can reach 3 bar (300kPa-143°C)
The steam must be absolutely saturated and dry.
