leaks au GraTin
700 g leaks (5−6 leaks)
100 g smoked ham cut into strips
2 tbs margarine or butter
2 tbs plain flour
20 cl double cream
salt and pepper to taste
juice of ½ a lemon
15 cl grated cheese.

Grease the Omnia food holder. Rinse and clean the leaks and cut
into pieces; use all the white and 5 cm of the green. Boil in lightly
salted water for 15 minutes and drain, NB Save the leak stock.
Put the pieces of leak in the food holder and cover with the ham strips.
Melt the margarine/butter and mix in the flour. Add the stock and
cream at little at a time. Season to taste. Fold in the lemon juice
and most of the cheese – keep some cheese to sprinkle on top.
Pour the sauce over the leaks and ham and sprinkle with the
remaining cheese.
Cover with the oven lid and bake for about 20 minutes on a low heat,
remove when it is a nice golden-brown.
