sTuffed baked POTaTOes
6 medium potatoes
lumPfish rOe

20 cl Greek yogurt
½ red onion
3 tbs lumpfish roe
shrimP fillinG
30 cl natural, low fat yogurt
6 tsp low fat mayonnaise
60 cl peeled shrimps
6 tbs chopped dill
Salt and pepper to taste
Wash and scrub the potatoes and allow to dry. Gently mix the fillings.
Line the Omnia food holder with aluminium foil. Place the potatoes
in the holder, cover with the oven lid and bake for 45-55 minutes on a
low heat until tender. Cut a deep cross in each potato while hot and
fill with the filling of your choice.
