3.4 PERFORMANCE
Cooling or freezing time is a parameter that is difficult to
establish with any precision, since this depends on the
type of food or foods in a cooked dish. The declared
performance levels were obtained by using potato purée in
off-the-shelf aluminium trays measuring 180x280x40H.
