Fish curry
Serves approx. 4
400 g pineapple chunks (tinned)
1 red pepper
1 banana sliced
600 g rosefish
3 tbsp lemon juice
40 g butter
125 ml white wine
125 ml pineapple juice
Salt and pepper Chilli powder
2 tbsp curry powder
2 tbsp cornflour
Method:
1. Quarter the pepper, remove the
seeds and pith, and cut into narrow
strips.
2. Cut the fish into chunks, and place in
a dish. Drizzle with lemon juice. Add
the pineapple chunks, red pepper,
banana, butter, wine, juice, spices and
cornflour to the fish, and stir well.
3. Cover, and cook for 5 minutes at
850 Watts, and then for a further
12 minutes at 450 Watts.
