Breaded products brown best if they are brushed evenly on both sides with clarified butter, oil or fat.
The addition of paprika beneath the breadcrumbs also helps browning. There are also special fats
that promote browning available.
A mixture of breadcrumbs and herbs or ground nuts, sesame and cornflakes could also be used for
breading.
