Check the height adjustment for correct functioning.

All parts not listed on the “Ambiente-2 maintenance
instructions table” must be checked at every service, and
if necessary, replaced.

If the parts are heavily contaminated with calcium it is
essential that you check the carbonate hardness
(calcium content) of the water and if necessary, take the
necessary action.
After servicing, check the following parameters and ad-
just if necessary:
Pump pressure 7 – 7.5 bar (check against a closed
system)
Outlet temperature of coffee without booster 84-86

C
and of tea water 90-95
o
C.
Coffee over-temperature 1 without booster (16
o
C), over
temperature 2 (7
o
C).
Pre-heat the valve (flush) without booster
Outlet temperature of coffee with booster 90

Grinding quality (grain size)

Quantity of dispensed water into the cup
In conjunction with the booster, evacuation via the
discharge hose must be checked.
The refrigerator must be maintained and checked in
accordance with the "Refrigerator maintenance
instructions".
The machine must be thoroughly cleaned and left in opti-
mum condition.
If work can only be carried out at a later date, the customer
must be informed and a note made on the service report.
2.4 Safety relevant parts A
1. Starting from production date 01/2001, the instant heater
and steam generator must be replaced every 60 months
for safety reasons. The instant heater and steam genera-
tor must be replaced every 36 months to and including
the production date 12/2000. The instant heater and the
steam generator must not be decalcified.
2. Each time the instant heater 065’111 / 061’164 and the
steam generator 061’156 are checked, the corresponding
test certificate must be filled out in the machine.
If an element is replaced the test certificate for the new
element must be attached. The document must always
conform to the element fitted (serial number).
3. The safety valves 065'240 must be replaced every 12
months for safety reasons.
4. If a part is faulty and cannot be repaired, the component
must be replaced.
Safety-critical parts such as: the instant heater, steam
generator and safety valves must never be subjected
to repair.
2.5 Conditions for faultless operations
Schaerer confirms that the Ambiente 2 coffee machine is
suitable for use in catering establishments and that, under the
conditions set out below, 120 – 180 portions every day, or
45,000 portions every 12 months can be served
1. The coffee machine must be connected to a supply of
drinking water, the calcium content of which must not ex-
ceed 8-12
o
fH or 5-7
o
dH.
2. The water must be uncontaminated and the chlorine
content must not exceed 100 mg/l.
3. Electrical voltage must not vary beyond the tolerances of
+/- 5%. It is essential to ensure that the machines are ad-
justed to the voltage available in the country concerned. If
voltage varies by more than 5%, a voltage stabiliser must
be installed to protect the electronic components.
4. Cleaning must be carried out in accordance with the user
guide or the cleaning instructions supplied. You should
ensure that you use the cleaning agents recommended
by the manufacturer.
Operating staff must be properly trained.
5. Maintenance must occur after every 45,000 servings or
every 12 months and all necessary repairs and replace-
ments should be performed.
6. The local customer services office has fully trained staff
and has the necessary replacement parts and tools
required to carry out repairs.
2.6 Lack of compliance with maintenance
rules
1. Schaerer assumes no liability for personal or property
damage or lost revenue to the contractual partner and/or
third parties which result from lack of compliance with
these maintenance rules.
2. The latest version of the maintenance rules is always
applicable. The contractual partner of Schaerer is obli-
gated to implement these rules immediately after receipt
of the new version and to impose these rules on all em-
ployees, representatives, partners, buyers etc. The con-
tractual partner is obligated to indemnify the Schaerer
company from all damage claims which result from a vio-
lation of theses rules.
