Note 10
The T-piece to the blast valve/baffle must be clean and
free of contamination. Make sure that the baffle 063’447
is fitted on the inlet side.
Note 11
In the model produced up to January 2002, the baffle
061'239 for the air intake is fitted onto the expander
065'645. Both parts must be kept clean, and if necessary
replaced by the new model 061'414.
Note 12
In the February 2002 model an expander 061'414 is
provided with a baffle aperture.
Note 13
Check the two baffles for milk stains and dairy fat. Make
sure that the baffles are fitted back onto the correct
location.
Baffle 063’445 having a diameter of 1.15 mm is fitted at
the nipple holder 063’464.
Baffle 063’447 (note 13 in the picture) with a diameter of
1.7 mm is fitted to the T-piece input (note 10 in the
picture to the expander.
Clean the baffles with the micro-brush 061’174.
Note 14
The refrigerator must be defrosted when necessary.
The capacitor (cooling unit ) and the compressor must be
kept free of dust.
You must check to see whether the refrigerator fan is
functioning correctly.
Note 15
Check that the baffles 067’185 are fitted to the output of
the rinsing valves, so that the tubes on POM piece (note
4, item 2) are not pushed back during a rinse operation.
Note 16
All parts not listed on the “Refrigerator SO-2/SE-2
maintenance instructions table” must be checked at every
service, and if necessary, replaced.
Check the following parameters after servicing:
Is the temperature in the refrigerator set to 3-5
o
C? (this
is necessary for optimum storage of milk)
Are the milk baffles 063’445 (dia. 1.15 mm) and the foam
baffle 063’447 (dia. 1.7 mm ) fitted?
Is the milk output temperature a minimum 70-75
o
C?
Is the foam quality OK and is the output temperature 70-
75
o
C?
The appliance with the milk solution must be thoroughly
cleaned and left in optimum condition.
If work can only be carried out at a later date, the customer
must be informed and a note made on the service report.
2.9 Conditions for faultless operation
Schaerer confirms that the Cappuccino equipment coffee
machine is suitable for use in catering establishments and
that, under the conditions set out below, 120 milk products
every day, or 45-50,000 portions every 12 months can be
served
1. The milk must always be cooled to 3-5
o
C.
2. The refrigerator must be connected to a supply of drinking
water, the calcium content of which must not exceed 8-
12
o
fH or 5-7
o
dH.
3. The water must be uncontaminated and the chlorine
content must not exceed 100 mg/l.
4. Electrical voltage must not vary beyond the tolerances of
+/- 5%.
5. Cleaning must be carried out in accordance with the user
guide or the cleaning instructions supplied. You should
ensure that you use the cleaning agents recommended
by the manufacturer.
Operating staff must be properly trained.
6. Maintenance must be carried out every 45 – 50,000 por-
tions or every 12 months.
7. The local customer services office has fully trained staff
and has the necessary replacement parts and tools re-
quired to carry out repair.
