2. Steam delivery as required. Low steam delivery (controlled via cavity
temperature): 1R25, 2R25 in series. 550W. Medium-low delivery: One
heater element, 1100W. Medium steam delivery: 3R25, plus 1R25,
2R25 in series, 1650W. Medium-high steam delivery: 2 heater
elements, 2200W. High steam delivery: 3 heater elements, 3300W,
bottom heat off.
Temperature at base of cavity maintained at 230°F to 239°F. Temperature
controlled by sensor on bottom heater element.
2.5.2 Steam Cooking below 212°F
Temperature setting up to 140°F.
Steam only, 3300W, until temperature in cavity is reached.
Temperature setting 140°F to 203°F.
Process same as for 212°F. Temperatures and time window adjusted
by software.
2.5.3 Combi Cooking
A combination cooking program involves the use of another source of heat
energy in addition to steam in order to achieve optimal results. The floor
heater element is an exception in this respect as it is needed to reduce
condensate. In a combination program, it is possible to set humidity as well
as the desired duration and temperature.
Possible combination cooking options:
Combination cooking with convection heat
Combination cooking with top and bottom heat
Combination cooking with broil
2.5.4 Combination Cooking with Convection Plus
Combination cooking / convection plus / 302°F / 30% humidity
Heat-up phase:
1. Convection fan operates at full speed. Convection heater element
activated, 1750W.
2. Filling of steam generator.
3. Once water level is reached, one heater element in steam generator
is switched on, 1100W.
Regulating phase:
1. Convection heater element activated as required.
2. The steam generator is operated with 1 heater element, 1100W, or
with two heater elements in series, 550W.
3. Dry air is introduced to the cavity or blocked by the air baffle.
The heater elements in the steam generator are not changed.

Combination cooking / browning/bake / 302°F / 30% humidity
